Seemingly Alsatian in weight, and with enough acidity to keep it light on its feet, the 2011 is a great reflection of the rich agricultural land surrounding the vineyards. Made in a fresh stainless steel fashion and careful to keep botrytis out of the equation, it’s incredibly easy to drink and make your everyday white wine. In terms of food pairings, in addition to huge portions of locally cured meats, other local specialties include fresh fish risottos, Švargla (headcheese with a ton of pig cheek), Svejži Sir i Vrhnje (fresh cheese with a dollop of sour cream), and Poga?ice sa ?varcima (biscuits fried in pork fat).
