This is the first release of a Dry Rosé to the SIMI portfolio and is a tribute to Simi matriarch Isabelle’s passion for growing roses. TASTING NOTES 87% Cabernet Sauvignon, 10% Malbec, & 3% Pinot Noir This is the first release of a Dry Rosé to the SIMI portfolio and is a tribute to Simi matriarch Isabelle’s passion for growing roses. The color is vibrant and lit from within: a vivid, rose-petal pink with a coral edge. On the nose, find wild strawberry, tart cherry, pineapple, fresh straw, pastry dough, and white pepper. These enticing aromas set the stage for the palate of alpine strawberry, dried pineapple, lemony crispness, and hints of sweet herb. Forward and focused, with lingering fresh berry fruit, bright acidity, nice structure, and a mineral finish that lifts the palate. VINEYARD NOTES 97% Alexander Valley, & 3% Sonoma Coast SIMI is fortunate to have three Alexander Valley estate vineyards, including our Los Amigos vineyard where we grew all the Cabernet Sauvignon fruit for this Rosé. Los Amigos is a classic, valley floor vineyard possessing sandy loam soils that are ideal for growing Bordeaux varietals. The varied soil types in this vineyard produce different flavor profiles amongst the vines and wine that expresses the best characteristics of Alexander Valley’s eastern benchlands—velvety texture and bright, luscious flavors. A small percentage of Pinot Noir from Sonoma Coast was blended in, adding a bit of elegance and weight on the palate to deliver a more food-friendly wine. PRODUCTION NOTES Spring ended at the perfect moment, with rain stopping just before the grapes were flowering. This set up an extended growing and ripening season with moderate temperatures ranging from 86 to 94 degrees during the day. Nights were cool and mornings were foggy—conditions that led to slow, gentle ripening for full fruit expression. We harvested the Cabernet Sauvignon fruit for this wine by hand, starting on September 19 and ending on October 2. Brix levels ranged from 23.0 to 24.3 degrees. WINEMAKER NOTES With our 2013 Dry Rosé, we bled the tanks after 12 hours of skin contact to ensure vibrant, beautiful color. We then fermented and aged all of the wine in stainless steel to maintain the delicate aromas and flavors we desired. While this Rosé is predominantly made from Cabernet Sauvignon (87%), we blended in 10% Malbec to spice things up a bit. FOOD PAIRING We recommend you enjoy this refreshing wine as an aperitif, or paired with fried chicken, oysters on the half shell, mussels and clams with fennel, or your favorite charcuterie plate.
