Garyubai Junmai Ginjyo uses 55% of Yamada-nisiki Rice polished. Using water from the River Okitsu, known for its clear water, we used a small amount of rice, approximately 600kg, for fermentation. We are proud of our standards of no compromise and no short cuts to produce this sake.
