      What is sake?

      First things first, let’s break down what sake is. Sake is a Japanese beverage made from fermented rice. A popular nickname for sake is ‘rice wine,’ which makes the sake making process seem closer to wine. Sake is actually brewed with fermented rice, so it’s actually more similar to beer than wine. There are many different kinds of sake, all different based upon the amount the rice is polished.

       What is junmai daiginjo?

      Junmai daiginjo is junmai sake that uses “pure rice”. This additional character trait makes it an ultra premium sake. Meaning, it’s the highest grade sake you can get. To be graded as a junmai daiginjo, the sake needs to be made with rice polished to at least 50% - or half its original weight. It’s usually pretty pricey and is served chilled to bring out the light and fragrant flavors of the sake. Junmai daiginjo pairs well with foods like sashimi.

      How is it made?

      Junmai daiginjo sake is made of water, koji mold, yeast and rice. As we mentioned though, the rice grains used need to be polished to at least 50%.
