      What's honjozo?

      A variety of Japanese sake, honjozo is a fermented rice drink. The manufacturing process of this rice liquor is similar to junmai sake. In the case of this beverage, sake masters add a small amount of brewer's alcohol to the mash during fermentation.

      The making of this Japanese beverage

      To prepare to make this drink, sake distillers polish rice so that no more than 70% of its original weight remains. Polished rice results in purer liquor. Brewers cook the rice and add yeast and a special mold known as koji to the mash. Koji turns the starch in the rice to sugar, while yeast converts sugar to alcohol. The sake master then adds water and up to 25% ABV of a neutral spirit. For best-tasting varieties, masters often add alcohol distilled from rice to give honjozo a lovely flavor and a distinct aroma. This Japanese rice liquor comes in different styles, and its taste and texture vary depending on the type and quality of the rice used, the water source and the brewing technique.

      This beverage is lighter in texture than junmai, making it easy to drink and enjoy over time. It's also very fragrant and has a smoother finish on the palate.
