They are then crushed and de-stemmed, and as always with rich, red, wines, the skins soak in the juice for a period during fermentation. The Aussie's are pioneers in regard to modern wine making and use temperature controls during fermentation to highlight the grapes natural varietal flavor and maximize the extraction of color and smooth, ripe, tannins.
