Our 2010 Cabernet Sauvignon is a perfect example of what this variety can be in the Mayacamas/Moon Mountain District. The color is deep, almost black with a ruby edge. The nose opens with notes of cedar, dark chocolate and crème de cassis, developing intense characters of black fruit after a moment in the glass. Take a sip, and you will find that this wine shows a subtle mix of rich, dark flavors; blackberry, cassis, and juicy red plum all vying for attention against a backdrop of lush tannins, set within round, generous mouthfeel. Stay with the glass and note how this wine keeps on opening; huge black fruit integrated with elegantly spicy oak, gentle notes of bitter chocolate and plump red berries, all woven together with big, ripe tannins that will allow this wine to age gracefully for decades to come. The finish is long and deep, bursting with luscious candied fruit characters, lasting a full minute or more. This is a true winemaking achievement.
