The first bottle of Freixenet was made in 1914 by Pedro Ferrer and Dolores Sala. Sala's family had been making wine since 1861 at their family farm in Casa Sala. Pedro was nicknamed Freixenet after his family's ranch “La Freixeneda." The translation of “La Freixeneda" is “ash tree grove" in Catalan. When Dolores and Pedro were married they combined their skills to create a fantastic company. Everything changes when a phylloxera infestation arrived, destroying many European vineyards. Not to be deterred, the couple replanted the land with white grape varietals and began making sparkling wine.
“Cava" is a classically produced sparkling wine from Spain using traditional Spanish grapes. Specifically, Freixenet Cava Brut Cordon Negro uses Macabeu, Xarel-lo and Parellada. Macabeu adds light and refreshing fruit aromas, while Xarel-lo adds rich intense acidity backbone. Parellada ties everything together with elegant fruity finesse. The winemakers at Freixenet are committed to quality and utilize hand harvesting over the span of several months in order to pick the berries at ideal ripeness. The sparkling quality is achieved by the traditional method and the wine is allowed to rest for 18 months in cool caves.
As expected from Cava, the Freixenet Cava Brut Cordon Negro tickles your nose with exciting little bubbles and aromas of lemon zest, apple and ripe pear. An array of delicate fruit flavors dance about your palette as the the mousse of the wine opens up. Rich notes of citrus, orchard fruit and ginger are readily apparent.
