    I was introduced to this Spanish sparkling wine at a brunch party. Delicious and perfect for mimosas. It's sweet without overdoing it and has bubbles, not the lame fizziness of beverages people keep "discovering" for which they pay too much money.

This collection of sparkling wines is Spain’s version of champagne. Primarily grown from the macabeu, parellada, xarello grapes, this bubbly blend can either be made into a white or rosé cava. To officially qualify as a cava, the sparkling wine must be made using the rigorous “traditional method” that originated in Champagne and involves double fermentation.
Cava is typically dry with zesty citrus flavors.
As a light to medium bodied sparkling wine, cava pairs exceptionally well with a number of dishes like artichokes, sheep milk cheeses, creamy sauces, paella, and fried foods. 
Cava, made in Spain, is a group of sparkling wines that can rival the quality and flavors of French Champagne. It typically is far more affordable than the French versions. The main difference is that Champagne can only be made from seven approved grapes.
