All about Cava Blends
A Cava Blend is a version of Spanish sparkling wine made with multiple grapes. Only white (blanco) cava can be made into a blend, as rosé (rosado) cavas are not allowed to be blended.
The most common grapes you’ll find are Macabeo, Parellada and Xarel·lo. Much like traditional cava, only wines produced in the traditional method may be labelled "cava"; those produced by other processes may only be called "sparkling wines" (vinos espumosos).
Once referred to as “Spanish Champagne,” (now a no-no due to EU rules), it is still colloquially called champán or champaña in Spanish, or xampany in Catalan.
Xarello, one of the principal grapes in all cava, including cava blends. Other grapes that can be contained in a Cava blend include Chardonnay, Pinot noir and Subirat, if that affects your enjoyment. Like any other quality sparkling wine, cava is produced in varying levels of sweetness, ranging from the dryest, brut nature, through brut, brut reserve, seco, semiseco, to dulce, the sweetest.
