We make this whiskey from local, organic grains that we mill on-site. We then distill in small batches in our traditional copper pot still to preserve the sweet, mellow character of the heirloom Wheat grains. Each batch is barreled in small 15 to 30 gallon charred oak casks for over a year before it is hand bottled at 42% ALC/VOL. No two batches are the same, as they each reflect the evolving terroir of Western Pennsylvania from year to year as well as the proclivities of distiller at the time it was crafted. Made with organic wheat, organic rye, and organic malted barley. Notes of salted caramel, malt, cinnamon and vanilla.
