Dark Roast Malt is our latest take on American malt whiskey. This product’s distilled from 100-percent barley: pale malt, Munich malt, chocolate malt and roasted barley. We ran it through our copper pot still twice and put it into used 10-gallon oak barrels for 16 months before sending it out into the world. Excessive gestation? No way. There’s historical precedent: Scotch whiskey is almost exclusively aged in used cooperage. Mostly used American ex-bourbon casks, actually, with a few sherry buttes thrown in for good measure. On a sip and smell, you’ll find fruitiness, peach pits, sweet grassy character before roast and smoke round out the experience. We produced just 500 bottles, and hope you enjoy yours.
