Vacas Chardonnay exemplifies small lot winemaking. It is small barrel fermented, hand stirred, and aged on the lees (sur lie in French) for 10 months in 100% French oak. Three percent Viognier adds a distinct floral note that makes the wine stand apart. Vaca Chardonnay exudes aromas of pineapple, guava, lemon zest, and jasmine, a rich texture and full body with a crisp, refreshing finish. Grapes selected for Vaca Cabernet Sauvignon are fermented in small lots to capture the essense of each vineyard site then aged 14 months in small oak barrels. Estate-grown Syrah imparts ripe, brambly fruit character and spice.
