The phrase the “bee's knees" was used in Prohibition times as slang to mean “the best." This cocktail, a gin sour that's believed to have been created around that time, used lemon and honey to mask the harsh smell of bathtub gin. There are many ways to put your own local & seasonal twist on this classic cocktail, including using local honey and steeping with local herbs (lavender, sage, to name a few).

Ingredients

  • 2 oz The Botanist Gin 
  • 0.75 oz fresh lemon juice 
  • 0.75 oz honey syrup (1:1 honey to water)
  • Lemon peel for garnish

Tools

  • Champagne coupe
  • Shaker
  • Jigger
  • Hawthorne strainer

How to Mix

  1. Combine all ingredients in a shaker filled with ice
  2. Shake and strain into a chilled coupe glass
  3. Garnish with a lemon peel
