While most breweries use pelletized hops that have been heated, processed, and formed into easy to use and store pellets, “wet hops" are unprocessed hops pulled fresh off of the bine. These hops must be used very shortly after harvest, 24-48 hours, otherwise they will spoil. As for whole cone hops, they are dried in “whole" instead of being grinded down and compressed as with pellet hops.
As for food pairing, the hop bitterness would cut through intense and aromatic cheeses like Stilton and other Bleu cheeses. Or top those cheeses on a burger as Hop Hunter's malt dances with the sweet and starchy flavors of the bun, as well as the citrus and pine notes slicing through the fat of the burger. Hop Hunter grilled and smoked dishes like, wood-fired salmon and barbecue beef brisket.
