Making Patrón Silver takes patience. Agave only ripens every eight years or so, and each Weber Blue Agave plant is chosen by expert jimadors (agave farmers) who know how to identify the agave with the optimal sugar content. Using a tool known as a coa, the jimadors strip away the agave leaves until they reach the piña, or the plant's heart. Once the piña is hand-chopped, it is baked in brick ovens and then crushed by a large volcanic stone wheel and roller mill. This mixture is left to ferment for three days before being distilled and aged.
