Vino Simbiotico represents an ongoing commitment to complete sustainability. It reflects a profound respect for the environment. It is a wine born of advanced soil management and rigorous, low-intervention winemaking. No filtering, no fining and no added sulfites; recycled packaging materials and solar power. Winemaker Francesco Iocono spent a decade on his vineyards and cellar preparing for this , the first release of Simbiotico. A single 30-hectare where we planted 25 hectares of vineyards; single hill dedicated to grape varieties yellow native of Campania such as Falanghina, Greek, Fiano and Coda di Volpe in the first place. A collection of other varieties bells, Sanginella, Agostinella, Catalanesca, Falanghina dei Campi Flegrei, Asprinio, that complement the vineyard and make it unique in the wine region. Oppida Aminea is located on the edge of Irpinia, where the soils are still suffering flu eruption of Vesuvius: the surface layer of the soil is of volcanic origin, insists on a marly limestone matrix. Here grow the vines and the grapes to maturity are presented savory, sugary, rich color. Respect in vinification of grapes, gently pressed and in some cases macerated and then aged in wood, gives rise to elegant wines although tasty, not heavy but we prefer to call long-lived YELLOW to distinguish them from the tendency that wants the white wines from Campania ready already after a few months after harvest, fruity and very good keeping qualities.
