With deep earthy notes, and a signature smoky flavor Mezcal is a great way to amp up your next cocktail. Similar to it's cousin tequila, Mezcal is made from the agave plant, however instead of using the leaves the 'heart' or pina is harvested and cooked down in underground ovens. This roasting process before distillation takes place is what gives this spirit its smoky overtones and slightly amber color. While you will often see Mezcal combined with tequila in drinks like the Mezcal Antiqugo Fashioned, it can also stand alone like in this tart Pineapple Mezcal Smash. It's unique smoky characteristics are often compared to that of scotch, and can be used in place of scotch in some cocktails.
