Those wooden casks also change the flavor of the rum a bit - making this rum varietal taste more smoky-sweet. The longer rum is aged, the darker it will become. The main difference between white (or light) rum and gold rum is aging. White rum is aged for less time than this variety which changes the color and flavor.
