Product description

A unique spirit that delights both gin and whiskey lovers alike, KOVAL Barreled Gin is crafted with the same prized recipe as the Dry Gin, but with a new level of citrus, spice and light butterscotch sweetness that come from its maturation in a KOVAL whiskey barrel. KOVAL Barreled Gin is crisp enough to be enjoyed straight or as a new layer of depth in classic cocktails such as an Old Fashioned, Negroni or Gimlet. KOVAL “ages the spicy-and-floral [Dry Gin] spirit in used whiskey barrels, leading to a big punch of oak flavor that’s almost difficult to identify as gin. It screams for a spirit-forward cocktail that highlights its taste, like a Manhattan.” - Playboy “Caramelised top notes of honeyed thyme greet the nose, while the taste of sweet vanillin from charred oak and whisky add a weight to the formerly floral nature of the gin...It’s exactly what you want from the genre and one of the true successes of the subcategory.” - Gin Foundry 94 Proof | Organic | Kosher GOLD MEDAL Los Angeles International Spirits Competition GOLD MEDAL New York World Wine & Spirits Competition

When gin is aged — which isn’t the norm — the act occurs in oak barrels. Whereas spirits like whiskey need a significant amount of barrel time to develop more character, gin doesn’t have to spend much time in a barrel to take on flavors of the wood. Its light body allows a barrel’s woody nuttiness to make a standout appearance after only a couple of months.
Gin doesn’t require a long aging period, which often ranges from three to 18 months. Because the spirit has a delicate flavor and a light body, flavors from the barrel will become noticeable after short stays. Gins with longer aging periods can pick up strong nutty flavors and a noticeable woodiness.
Gin is not usually aged. In fact, gin is only federally recognized as an unaged spirit. The reason gin is typically unaged is that its botanicals and distillation process results in a product that’s ready to head out the door. Those who age gin do so in barrels and are seeking a way to add a particular distinction to their flavor profiles.
