      In the case of aged gin, age brings flavor, not wisdom. Recent years have seen an increase of people exploring this deeper version of a classic spirit, but what is it and what do you do with it? This might come as a surprise, but antique gin goes back as far as the late 18th century. It was easy and cheap to transport gin in barrels back then, rather than glass bottles. A side effect of the barrel, or cask, was that the gin changed color and flavor. It was an unexpected side effect, but not an unwelcome one.

      How gin ages

      Oak barrels are the traditional means used to create aged gin. While many forms of alcohol can take years to age, gin only needs a few months. The aging process turns the color anywhere from light honey to dark amber. Barrels for rye, Scotch, bourbon and cognac are options to age gin, but the most common barrel is a bourbon barrel.

      What does aged gin taste like?

      Juniper berries are the main ingredient in gin, along with other botanicals. That gives traditional gin a pine or herbal flavor. The aging process helps to deepen these notes as well as adopt aromas that have absorbed into the oak barrels from previous alcohols like bourbon. That's why barreled gin can have vanilla and wood notes that are similar to whiskey. At the same time, the aged alcohol retains the botanical flavors of regular gin before the aging takes place.

      How should you drink it?

      Generally speaking, gin is a versatile beverage. You can drink it straight, mix it in a cocktail or pair with tonic for a classic gin and tonic drink. Aged gin is a good replacement or alternative for other forms of liquor since it takes on the whiskey flavors during aging.
