This big, bold artisanal wine is brought to you by some of the pioneers of Paso Robles in California's Central Coast. Justin Baldwin, a Stanford graduate and former investment banker, had a vision of creating French-worthy Bordeaux blends right in California. In 1981, Baldwin bought 160 acres of land in Paso Robles, being amongst the first winemakers to call Paso Robles home. Justin Vineyards crown jewel, Isosceles, the 1994 vintage, became a critical darling after a big wine competition in London. This win firmly established the vineyard as a force to be reckoned with and put Paso Robles on the map.

Justin Cabernet Sauvignon is made with painstaking detail, which drives the quality of the wine. The grapes are handpicked from the vine. After they're crushed, the wine is aged in small 25% American/French oak barrels for 21-24 months which allows the wine to develop a beautiful intensity. One of the factors that makes Paso Robles a fantastic growing environment for cabernet sauvignon is the weather. Sitting 2 hours north of Santa Barbara and 4 hours south of Napa Valley, the Central Coast is a haven of warm sunny days and cool California nights, the absolute ideal grape growing conditions.

Justin Vineyards Cabernet Sauvignon is a full bodied and powerful red wine with well-balanced nuances that add the complementary elements that make this cabernet such a powerhouse. It has a deep, ruby color and dark fruit on the nose. Swirl away in your glass and wake up the complex layer of flavors. Black cherry and black currants dominate the fruit. Delicate notes of violet balance with the feint touch of dried sweet tobacco leaves and crushed violet petals. The French oak aging gives Justin Cabernet Sauvignon warm undertones of cinnamon, nutmeg, cocoa and baking spices.

The unabashed big personality of the Justin Cabernet Sauvignon makes it imperative to pair with food that has equally dynamic qualities. Think warm, savory comfort dishes like grilled steak with au poivre sauce, beef stew, pasta with Bolognese or arrabiata sauce, anything with a slight char from the grill like ribs, burgers or beef kebabs. Cheese pairings also have to be powerful enough to stand up to the wine: Gorgonzola, taleggio and Roquefort would all work nicely and have enough funk to come alive with this wine. It's perfect to open when the first chilly days of fall have you pulling out your favorite sweaters.
