Dogfish Head 90 Minute IPA has been named by multiple sources as the best imperial IPA in the United States. We most certainly think it is a deserving description of this incredible 9% beer coming from the off-centered folks at Dogfish Head brewery in Milton, Delaware. The first in their series of continuously hopped beers, the concept was supposedly developed when Sam Caligione, owner of the brewery, watched a television cooking show episode describing a way of adding pepper in slow, continual increments as it cooked. The concept of doing this, whether with pepper in soup or hops in beer, is to give a huge flavor without making things too over the top to actually enjoy. Dogfish succeeding with this experiment and the rest is history.
Boiled for 90 minutes, with hops being added slowly throughout that entire process rather than simply at the beginning and the end, which is more standard, this beer is ignited with the hop flavor that we love without being overly bitter or astringent. Poured into a proper IPA glass the beer pours a light amber, nearly honey color with a finger of white head. The aroma is chock full of Pacific coast hop flavor. Pine and resin envelope the nostrils with hints of ruby red grapefruit, lemon pith, and light earthy spice. The flavor is big as well. The 90 minute boil brings a bit of extra caramel flavor to the malt which performs a delicate balancing dance with the flavorful, citrus flavored hops, like a brandied fruitcake of sorts. The finish is smooth and the big alcohol content seems to be well hidden beneath the wonderful flavor of the malts and hops.
Dogfish Head 90 Minute IPA is an awesome beer to bring to a party as it's big hop flavor isn't frighteningly bitter. It's an IPA that a novice can love just as much as the guy with a full cellar dedicated to beer. Pair it with grilled pork chops and family style bowls of oven roasted brussel sprouts and sweet potato casserole. Throw a six-pack or two on ice in preparation for your next jazz filled house party or an upcoming rivalry game.
