The philosophy behind Dark Horse is the idea that excellence comes from being brave and taking risks. A dark horse is an unknown competitor that unexpectedly rises up to great levels of success. Winemaker Beth Liston considers winemaking to be a search for excellence, utilizing both groundbreaking and proven winemaking and viticultural methods to create the best wine possible at the best price possible. Her goal through her leadership at Dark Horse is to creates a portfolio of wines that each make a profound and unique statement.
Liston is determined to prove that with outstanding winemaking techniques and good planning she can create wines that perform way above their reasonable price points. Making a good Rose starts in the vineyard, so Beth uses superior fruit and times the harvest so flavors have developed but still retain bright fresh flavors and tartness for the final wine. Dark Horse Rose is a Provence-style rose and is primarily Grenache based. Grenache is an excellent grape for rose because the skins are lower in color, and the berries lend richness, fruitiness and floral character to the wine.
The Dark Horse Rose is made with a goal for purity of fruit flavors. Expect rich aromas of flowers, raspberry, and strawberry along with subtle hints of citrus and herbs. The wine is crisp and energetic on the palette with rich flavors of strawberries and cherries. Pair this with a garden salad or push the limits and try it with a cheeseburger. You may be surprised just how versatile the Dark Horse Rose is with food pairing.
