This young Brut Nature cava, Canals Canals Clàssic from the Cava DO has been crafted from a traditional coupage of Macabeo (viura), Xarel-lo, and Parellada grapes. These Macabeo and Xarel-lo grapevines are situated at 360 feet (110 Meters) of altitude in the central region of Penedès. The Parellada grapevines are situated at altitudes of over 1,030 feet (315 Meters) in the northern region of Penedès. The climate in these regions is temperate due to the Mediterranean Sea. The soils in these areas are low in natural organic material and have good permeability with their chalky-clay compositions. The grapes in this coupage were harvested by hand between September and October. The grape must from each varietal was fermented separately in stainless steel vats at controlled temperatures between 54 and 57 ºF (12 and 14 ºC). This cava was then aged in its bottle for nine months with rima rotation.
