In 1608, King James granted Sir Thomas Phillips a license to distill in the town of Bushmills in County Antrim. For over four centuries through good times, bad times, fire, war and prohibition, Bushmills Irish Whiskey has persisted. You can taste the resilience and character. Bushmills' original spirit is a blend of triple-distilled malt whiskey and lighter grain whiskey made with water from Saint Columb's Rill and aged in American oak casks.
The bright gold whiskey has a nose that is vegetal and organic with aromas of grain, grass, blossoms, wood and vanilla. The flavor is sweet and slightly metallic with notes of copper, honey, sweet oats, elderflower and minerals. The finish is spicy and a little hot with lingering hints of brass, barley and cardamom.
Naturally, a great whiskey like this should be respected with little or no mixer. The sweetness and spice of a ginger ale do work nicely with Bushmills. But there's no reason you can't have some fun with this. Try an Irish Martini. Add equal parts Bushmills and good neighbor Bailey's Irish Cream to a cooled shot of espresso. Shake it well and strain into a chilled martini glass.
