GRILLED MEXICAN STREET CORN

Serve this delicious corn on the cob with refreshing Tecate® beer for the perfect match.

Makes: 6 servings

Ingredients:

6 corn cobs, husks and silks removed
2 tbsp olive oil
1/4 cup mayonnaise
1/3 cup fresh cilantro, divided
3 tbsp sour cream
1 tbsp lime juice
2 tsp finely grated lime zest
1/2 tsp chipotle chili powder
1/4 tsp each salt and freshly ground pepper
1 clove garlic, minced
1 cup finely crumbled feta cheese
Lime wedges
Tecate®, for pairing

Directions:

Preheat grill to medium-high heat; grease grate well. Brush corn evenly with oil. Grill for 10 to 12 minutes or until tender and grill-marked.

Stir together mayonnaise, 2 tbsp cilantro, sour cream, lime juice and zest, chipotle chili powder, salt, pepper and garlic; brush all over corn. Toss remaining cilantro with feta cheese. Roll corn in cheese mixture. Serve with lime wedges.

Tip:

For a smaller appetizer and to serve a larger crowd, cut ears of corn into thirds before grilling.

For a more authentic flavor, use queso fresco or Cotija cheese.

CHEESEBURGER FLATBREAD

This fun appetizer combines two of the most-loved foods of all time: burgers and pizza. Serve with Sol® beer and the crowd will go wild with delight.

Makes: 8 servings

Ingredients:

3 hamburger patties
1 lb prepared refrigerated pizza dough
1 tbsp olive oil
1/3 cup prepared barbecue sauce
1 1/4 cups shredded cheddar cheese
3/4 cup shredded iceberg lettuce
1 tomato, chopped
3 tbsp chopped red onion
2 tbsp ketchup
2 tbsp mayonnaise
Sol®, for pairing
Lime wedges


Directions:

Grill hamburger patties according to package directions. Let cool until easy to handle; crumble or chop into small pieces. 


Preheat grill to medium-high; grease grate well. On lightly floured work surface, cut pizza dough in half. Roll out each portion into 10- x 6-inch rectangle, about 1/4-inch thick. Brush each side with oil. 


Grill dough for 2 to 3 minutes or until bubbles start to form on top and bottom is well-marked. Flip and grill for 2 to 3 minutes or until bottom is well-marked. Transfer to baking sheet. Reduce heat to medium-low. 


Spoon barbecue sauce evenly over top of each flatbread. Scatter with cheese and crumbled burgers. Return to grill; close lid and grill for 3 to 5 minutes or until toppings are heated through. 


Garnish with shredded lettuce, chopped tomatoes and onions. Drizzle with ketchup and mayonnaise. Cut each flatbread into 8 pieces.

Tip:

If you like, serve with pickle slices, mustard and finely chopped minced onion.
