Also known as the sea scorpion, the Sculpin fish has poisonous spikes on its fins that give a strong sting, but the fish itself is considered one of the tastiest in the world. Certainly enjoyable out of a bottle or can, but a beer with this much hop character is best served out of a glass for the full effect. It pours a bright honey blonde color capped with a fizzy white head that should remain floating on top of the beer for some time. Putting your nose to it, the beer perks out of the glass like a bowl of ripe seasonal fruits. Huge notes of lemon rind, pineapple skins, mangoes, and orange pith rise above the light grainy notes from the malt. The flavor is huge like the smell, bubbling with similar tastes, but giving birth to the essence of fresh pine, pink grapefruit rind, with just a touch of sweetness and a hint of dry bitterness in the finish. It's a wonderfully balanced brew, but most certainly for those who love hops.
Ballast Point Sculpin IPA is an ideal beer to pair with foods that can stand up to it's strong hop character. Try it with tandoori chicken with a side of garlicky naan bread or go a simpler root and team it up with a deep fried sampler platter of onion rings and spicy chicken tenders and a side of bleu cheese dressing.
