DENOMINATION: IGT Salento rosso. GRAPES: Primitivo. PRODUCTION AREA: San Severo AGE OF THE VINEYARD: planted in 1995. SOIL:calcareous with sandy loam texture. YIELD PER HECTARE:10,000 kg from 5,600 plants per hectare. VINIFICATION: in temperature-controlled stainless steel vats favouring prolonged contact of must with skins. Malolactic fermentation takes place in the month of November. Aging at first for at least 6-8 months in cement vats and then in the bottle for at least 6 more months. BOTTLES PRODUCED: 10,000 – 15,000. COLOUR: intense ruby red with hints of purple. SCENT: intense, very persistent, rich nose of wild berries with slight spicy notes. TASTE: harmonious, well-balanced, with a good structure and a rich texture of sweet tannins. ALCOHOLIC CONTENT: 14 / 14.5 % by vol. FOOD MATCH: Meat, game birds, aged cheese with firm texture. SERVING TEMPERATURE: 18°C (65 F). AGING POTENTIAL: 4-5 years, particular vintage years even longer.
