For this Adobe Red, the grapes were de-stemmed and sent directly to temperature-controlled stainless steel tanks. Two days of cold soaking preceded fermentation. The new wine was pressed at dryness before oak aging: 12 months on a combination of French (70%), American (20%),and Eastern European (10%) oak.
