If a Vodka & Soda is your go-to drink, you have to give these a shot (see what we did there?). Using spiked seltzer in place of plain club soda kicks these up a few notches, and opens up tons of opportunity to play around with different flavor combinations. If you are making for a party we recommend mixing up a few different batches and dropping in a coordinating fruit piece to the top so your guests know what to expect! Some of our favorites are Lime Spiked Seltzer with Raspberry vodka, and Orange Spiked Seltzer with Orange flavored vodka. Happy mixing!
Ingredients
- 2 Packets of Unflavored Gelatin
- 1/2 cup Spiked Seltzer (We chose lime)
- 1 cup Flavored Vodka (We chose Smirnoff Raspberry)
- 1/2 cup boiling water
- 2 tbsp granulated sugar
- Fresh fruit to garnish

How to Mix
- Combine unflavored gelatin mix and granulated sugar in a bowl and pour in boiling water.
- Stir together until gelatin & sugar granules are completely dissolved.
- Pour in remaining ingredients and mix well until completely combined.
- Line a rectangular glass pyrex dish with plastic wrap and pour in mixture to set.
- About halfway through the setting process place fresh fruit pieces evenly throughout the dish, then return to the fridge to set the rest of the way.
- When ready to serve, slice into squares around each of the fruit pieces.
