Ingredients

  • 6 oz Vodka
  • 1.5 lbs Plum Tomatoes
  • .75 cup Tomato Juice
  • 1 Large English Cucumber
  • .5 Cup Red Bell Pepper
  • .25 Cup Chives
  • 1 Small Jalapeno
  • .5 Cup Cilantro
  • 1 Small Garlic Clove
  • 2 Tbsp Olive Oil
  • 1 Lime
  • 1.5 Tbsp Balsamic Vinegar
  • 1 Teaspoon Salt
  • .25 Teaspoon Pepper

Tools

  • Pitcher
  • Pint glass
  • Measuring cup

How to Mix

  1. Seed, skin and crush the tomatoes, passing the pulp through a fine mesh strainer until you have 3/4 cup of juice.
  2. Next seed both peppers, making sure to carefully wash your hands immediately after working with the jalapeno.
  3. Drop all ingredients, except the vodka into a blender and blend until the vegetables look roughly chopped and combined.
  4. Pour your mix into a pitcher and refrigerate overnight to fully integrate flavors.
  5. To serve, place half a scoop of ice into the bottom of 5 pint glasses and pour in 1.5 oz of vodka into each.
  6. Fill the remainder of the glass with your gazpacho mix and stir slowly to combine.
  7. Serve with a lemon wedge and fresh vegetable garnish.
