7 Simple Date Night Drinks for Summer

It's that time of the year again. The sun comes out, the heat rushes in and there's nothing quite like a cool drink on your porch for date night. Lucky for us, our talented crew of Top Shelf Bloggers mixed up the ultimate list of impressive, but simple cocktails to make just for the occasion.

1. The Mimosa Mojito

Mimosa meets mojito - this fun spin on a mojito combines two classic cocktails for a refreshing (but strong!) summer sipper. Fresh mint adds that signature mojito flavor, with notes of orange juice and champagne to give it a sophisticated touch.

Ingredients:

  • 1 1/2 ounces lime juice
  • 10 mint leaves
  • 2 ounces white rum
  • 2 ounces orange juice
  • 1/2 ounce simple syrup
  • 2 ounces champagne or sparkling wine
  • Ice

Instructions:

  1. In a cocktail shaker, muddle the lime juice, mint, and sugar together to release mint oils.
  2. Add rum, orange juice, and simple syrup and shake well. 
  3. Pour into a highball glass filled with ice. 
  4. Top with champagne, stir in briefly, and garnish with a mint sprig. 
  5. Serve immediately.

2. Rosé and St. Germain Cocktail

Since rosé is also known as "summer water", it was only fitting to whip up a cocktail with Veuve Clicquot's delicious rosé with a little lime, St. Germain, muddled blackberry and more! It's such an easy drink to whip up on a warm summer day, and you'll be making them non-stop after a long week at work to celebrate. Believe me, these will definitely be a hit at your next girl's night or back porch party.

Ingredients:

  • A cup of rosé
  • 8 blackberries muddled to enhance flavor
  • 2 ounces of St. Germain
  • Juice from 1/2 of a lime
  • 1/2 ounce simple syrup
  • Sage and lime slices for garnish

Instructions:

  1. In a measuring glass, combine the rosé, St. Germain, and lime juice together, stirring to combine. 
  2. Scoop muddled blackberries into the bottom of each glass, and then pour the rosé mixture into the glass. 
  3. Top off each glass off and garnish with fresh limes slices, blackberries and sage.
  4. Enjoy!

3. The La La Land

The La La Land is an easy and impressive summer recipe. This vibrant pink cocktail is bittersweet and refreshing with a bit of fizz.

Ingredients:

  • 1 1/2 oz. gin
  • 1/2 oz. Aperol
  • 1 oz. pink grapefruit juice
  • 1/4 oz. simple syrup
  • 2 oz. prosecco

Instructions:

  1. Combine gin, Aperol, grapefruit juice, and simple syrup in a shaker with ice and shake until chilled. 
  2. Strain into a coupe glass or champagne flute. 
  3. Top with prosecco and garnish with a slice of grapefruit.

4. Classic Gin and Tonic

5. Blackberry Jam Cocktail

This Blackberry Jam cocktail is a super simple, easy to make drink that features the flavor of fresh summer.

Ingredients:

  • 1 Tablespoon Blackberry Jam
  • 1 oz Vodka
  • Club Soda
  • Sage (For garnish, optional)

Instructions:

  1. Place blackberry jam in the bottom of a collins glass. 
  2. Add Vodka
  3. Add Ice
  4. Fill glass to the top with club soda, then stir to combine. 
  5. Place a piece of sage on top as garnish.

6. Raspberry Caipirinha

Caipirinhas are becoming more and more popular outside their native Brazil and for good reason - they make a fantastically refreshing, easy cocktail perfect for a warm day. Tart lime, gently sweetened and mixed with cachaca - Brazil's answer to rum. But be warned, they're both pretty strong and addictive!

Ingredients:

  • 1⁄2 large lime, cut in 2-4 pieces
  • 4 raspberries
  • 1⁄2 tsp sugar
  • 2 oz cachaca

Instructions:

  1. Muddle together the chunks of lime, raspberries and sugar in the bottom of a glass. 
  2. Add the cachaca and a couple ice cubes. 
  3. Stir to mix then serve.

7. Spiked Hibiscus Lemonade

Nothing is more refreshing in the summer than icy lemonade, but I'm taking this classic and turning things up a notch. This infusion of crisp citrus and fruity hibiscus is quickly going to be your new go-to cocktail of the summer...flower garnish optional.

Ingredients:

  • 1 tumbler full of crushed ice
  • 2 shots lemon vodka
  • 3 shots fresh lemonade
  • 2 tsp Wild Hibiscus Flowers Rose Syrup
  • Splash of tonic water
  • Optional: lemon/lime wedges to garnish

Instructions:

  1. In a shaker, add lemon vodka, lemonade and Wild Hisbus Flowers Rose Syrup. 
  2. Shake well. 
  3. Pour over crushed ice. Splash in tonic water for fizz. 
  4. Garnish and serve.
